The
Belfort Lecture was given by Dr.
Michael J. Gidley Wednesday, May 8, 2002 at the WCCR Belfort
Lecture and Technical Conference held at Purdue University. The
title of his presentation was "Influence of
Polysaccharide Composition on the Structure and Properties of Cellulose-based
Composites".
Dr.
Gidley is Group Leader, Plant-based Foods and Ingredients for Unilever Research,
Bedford, UK. In that capacity he directs the research of 13
postdoctoral associates and 14 graduate students studying plant material processing
from a materials science perspective, searching for and sourcing
functional ingredients from plants, and selecting raw materials and
processes to impart desired food properties. Mike
Gidley earned a B.Sc. degree in chemistry from Imperial College,
University of London and a Ph.D. degree in chemistry from the University
of Cambridge (1981). He was awarded the Royal Society of Chemistry
Carbohydrate Group Medal in 1990. He
has also led Unilever Research efforts in structure-function relationships
of starches and hydrocolloids, enzymic modification of polysaccharides,
starch modification, polysaccharide biosynthesis and its genetic control,
and molecular and cellular origins of plant material properties.
