Dr. BeMiller's Staff

                                                                                         

Dr. Jae-Kwon Lee received his B.S. and M.S. degree in Food Engineering from Yonsei University, Seoul, Korea. He earned his Ph.D. degree in Food Science from Texas A&M University in August 1991. His dissertation theme was “Effect of Deep-Fat Frying on Physico-Chemical Characteristics of Tortilla Chips”.  After that, he was working as a professor at the department of Food Science and Biotechnology in Kyonggi University, Korea. His main research field involved in studying starch structures and properties during processing, and investigating the role of starch and non-starch carbohydrates on the functionality of various foods.  In August 2007, he came to Purdue University using his sabbatical leave to study with Dr. BeMiller. Currently his research focused on studying the utilization of modified starches on the characteristics of edible film strips.
